Fab Food Month week 3 – Rhubarb and Apple Crumble
Create the perfect winter dessert with this rhubarb and apple crumble.

Ingredients
Crumble | Fruit |
200g oats | 6 apples (peeled, cored and diced) |
100g wholemeal flour | 2 pears (peeled, cored and diced) |
40g raw sugar | 3 large rhubarb, cut into 2cm chunks |
1/2 tsp cinnamon | 40g brown sugar |
1/2 tsp ground ginger | lime juice – good squeeze |
150g butter | |
100g unsalted butter | |
2 egg yolks |
Method
Preheat oven to 180°C. Grease a large ovenproof dish.
Combine rhubarb, apple, pear, sugar, and lime juice in the prepared dish.
Bake, covered, stirring once, for 30 minutes or until fruit is just tender. Remove from oven.
Meanwhile, combine oats, flour and sugar in a large bowl. Add butter and massage it into the flour mixture. (this can also be done in a food processor) Sprinkle it over the apple and rhubarb mixture.
Bake, uncovered, for 25-30 minutes or until crumble is golden brown.
